Whisk together 3 eggs, 60g sugar, pinch salt, 75 g flour
add 80g melted butter and 25g concentrated carrot or beetroot juice
transfer to a siphon, charge and shake twice
grease a paper cup, poke holes in bottom and half-fill with mix from siphon
microwave for 45-60 seconds
rest upside down in cup for 2 mins before turning out, then tear into fluffy clouds and dress with really good creme fraîche and micro herbs.
